Lajos Varsányi was already a third-generation grape grower when he founded the winery that carries his name in 1991. It was a pivotal moment in Hungary’s wine story; for the first time after decades of Socialist state control over the wine industry, growers and winemakers were allowed to work for themselves again. Varsányi’s ambition was at once specific and modest: to build a modern winery worthy of the traditions of the Eger hills. He began with the quality revival of Debrői Hárslevelű, an aromatic white that is one of the region’s traditional signatures. But it was his rosé – a novelty in Hungary during the late ‘90s – that quickly made the winery’s name.
The Varsányi family now farms around ninety hectares spread between Aldebrő and Egerszalók, across a scatter of named vineyard plots. Among these is Szent János völgy – St John’s Valley – a prized location whose conditions are particularly suited to the whites and light-skinned varieties favoured by the estate.
In the mid-2000s, Lajos’s children joined the business, and it became a true family concern. Judit keeps an even keel as the head of finance, while Kati, the youngest to qualify as a winemaker, arrived with fresh ideas and new energy for the cellar, and Gabriella runs logistics. Lajos himself has moved into an overseeing role and, since 2014, the wines have been in the hands of head winemaker István Patai.
Beyond the cellar: The heart of Varsányi’s hospitality is the House of Tradition and Future, a tasting room fitted out in a granary dating to the nineteenth century. Here, the family hosts wine presentations and weddings for up to ninety guests, with a working cellar still ageing wine in the levels below. Rooted in the Eger wine community, the estate keeps its cellar doors open to visitors drawn to the hills around Verpelét.
