We often take for granted the work of this award winner. Brewing accessible beers has led to its increased popularity in mainstream bars, but so too has it concealed the origin story that positions this brewery close to the heart of what craft is all about. Williams Brothers beer has filled our fridges for so long as to become a common household name, particularly in Scotland, where the landscape and natural resources surrounding the brewery have fuelled and inspired the brand and its brewing practices. 

The real-life Williams brothers, Scott and Bruce, started out 30 years ago, brewing ancient recipes that use indigenous ingredients in place of hops. The brothers collaborated with local heather farmers, and foraged seasonally for spruce tips, gooseberry and elderberry to flavour their Fraoch heather ale, Grozet gooseberry lager, and Alba Scottish pine ale, all of which they still make and sell on their website. 

Being so closely connected with the land that inspires and supports the brewery, it makes sense that Williams Brothers is environmentally conscious and, for lack of better words, a fiercely Scottish brewery. The artwork for the beer in this month’s box hails from Scott’s good pal Mil Stricevic – a lecturer at the world famous Glasgow School of Art – and Scott informs me, in all seriousness, that this beer is best enjoyed while watching the Scottish football or rugby.

Chillax ‘Cold Brew’ IPA is a development on Williams Brother’s much loved Caesar Augustus, but with more Citra, Cascade, Azacca, Eldorado and Galaxy hops added during fermentation, and the beer undergoing an extended period of cold conditioning to bring you an easy drinking IPA with remarkable fruity hop aromas.
