Seven Stars is, in a way, a sister to The Market Porter, since the former is owned by Rolf Munding, and the latter part of the Market Taverns group, of which Rolf is a major shareholder. Where the sun never sets on The Market Porter, stationed on the corner of London’s ever-heaving Borough Market, Seven Stars was set up to be a local’s boozer on the sunny, and much quieter, South West coast.

Rolf bought the centuries-old building the Seven Stars calls home in 2018 and spent “a lot of money on it”, furnishing the upper floors of the building with seven comfortable rooms. However, Rolf’s original plans for the venue were short-lived, and no sooner had the pub reopened for business, after the pandemic, than Rolf crossed paths with local brewer Tomasz Trzcinski. One thing led to another, and in 2021, Tomasz opened a nano brewery behind the pub, and began producing beer for the Seven Stars and a select number of local venues on his 2.5BB brew kit and three fermenters. Hidden Brewery was born, and The Seven Stars became a brewpub.

This year, Seven Stars was voted the best pub with rooms in Cornwall, and Hidden Brewery has formed close bonds with St Ives Brewery, which helps Tomasz to scale his recipes up when the occasion calls for it. Most recently, the two breweries have partnered to produce Tomasz’s Hidden New England IPA, a quintessential hop-forward modern IPA in which Citra and Simcoe effortlessly harmonise to produce a juicy sweetness and balanced bitterness.
