Beyond Belief Brewing
Beyond Belief Brewing exists to tackle food waste generated during the food manufacturing process. Founded in 2021 by Freddie Ugo, a then-postgraduate student studying observation science, the project began as a way to make use of off-cuts at his family’s pasta factory. Since then, operations have grown arms and legs, becoming a mult-faceted project that helps food manufacturers convert their waste into a source of fermentable sugar, suitable for brewing. Today, that looks like using pasta, bread, and sponge cake as part of a beer’s grain bill, and using citrus peel, mango and more alongside hops.
