The Mikkeller story began in 2003 in a small Copenhagen kitchen, where math and physics teacher Mikkel Bjergsø started experimenting with hops, malt, and yeast. What started as a hobby to recreate his favorite IPAs quickly turned into a global phenomenon. Driven by a "gypsy brewing" model in its early years, Mikkel traveled the world collaborating with different breweries to bring his inventive recipes to life, eventually trading his classroom chalkboard for a full-time pursuit of brewing excellence.
Mikkeller is defined by a refusal to be pinned down to a single style. Their brewing philosophy treats every ingredient—from coffee and yuzu to chili and chocolate—as a potential building block for a new experience.
