Fermentage
Those among us whose interest in alcohol extends beyond the world of beer, might be familiar with the term ‘coupage’. In winemaking, it refers to the blending together of various grape varieties to produce a wine with the desired characteristics. That a beer can be greater than the sum of its parts, and draw influence from other fermentation practices are foundational beliefs at Fermentage (a hybrid of the words 'ferment' and 'coupage'), a Lisbon-based brewpub which opened in 2016. Expect the unexpected, alongside modern interpretations of classic styles.
